Ginger Beer Recipe

Hi all
Do you think the following recipe would work

10lt brew

500g ginger root
100g honey
1x lemon rind and juice
2kg light dme
1x champagne yeast

Add the grated ginger, lemon and honey to 5lts of water and simmer for 60mins. Sieve off the ginger etc. and bring to the boil, add the dme.
Transfer to the FV and top up the 10lt @ 20degree add the yeast.

Please add your suggestion's and comments

Sounds lush, will go quite dry with champagne yeast, be lovely xmas morning whilst peeling sprouts.
