Hi Folks.
I've just bottled up a batch of strawberry mead and it was a bit sharp. (I realise that it will take a long while to clear) is it possible to back sweeten by adding a spot of honey to the bottle? (I have stopped fermentation with stabilising powder so secondary fermentation shouldn't be a problem)
 
It's possible to so long as you've added sorbate to prevent further fermentation. Adding some to each bottle could result in varying results from one bottle to the next but there's no reason you can't do this.
