Honey Beer, advice needed.

I brew this recipe often, and I'm putting it on again in a week or two;

Ingredients Amount Item Type % or IBU
2.20 kg Light Dry Extract (15.8 EBC) Dry Extract 68.8 %
0.10 kg Amber Malt (43.3 EBC) Grain 3.1 %
30.00 gm Goldings, East Kent [5.00%] (60 min) Hops 7.8 IBU
15.00 gm Goldings, East Kent [5.00%] (30 min) Hops 3.3 IBU
10.00 gm Goldings, East Kent [5.00%] (10 min) Hops 1.0 IBU
0.25 tsp Irish Moss (Boil 10.0 min) Misc
0.90 kg Honey (2.0 EBC) Sugar 28.1 %
1 Pkgs SafAle English Ale (DCL Yeast #S-04) Yeast-Ale

It's a cracker, brewed it about 5 times and always gone back to the original recipe, it works very well despite how weird the quantities are. That's a 2 gallon boil, by the way.

On order, I have Mt. Hood hops specifically for editing this recipe, as well as CaraGold, CaraMalt, Crystal, CaraPils and Torrified Wheat. I'd like some ideas to make this a sweet, floral, lemony, grassy honey beer. Where should I incorporate the Mt Hood with the current recipe? Any ideas on which speciality malt to use? cheers :)
 
would a crystal/caramel malt (includind german light crystal/cara-hell) be what your after ? sweet caramel flavour ,full mouthfeel, amber colour and helps head retention what my info says .
