Wilko white wine kit, wife has worked out how to brew it, shame me into doing it, so temperature too high for a beer brew, want 19 to 20 degs C, but wine said 20 - 25 degs, so that seemed OK, however it started to raise reached 27 degs and I decided must do some thing, so dish cloths over the demijohn sitting in a paint roller tray sensor strapped to side, and a desk fan connected to the thermostat.

OK temperature has dropped, and it has stopped forcing foam out of the air lock, set thermostat to 22 degs C and it is not turning off. but do I need to worry? What is the result if wine goes over temp? With beer a bad after taste, but what happens with wine?
