You didn't just do the timber for the rubber bit but the from the inner part of the rubber to the outer edge of the fridge body?
That would line up with mine and wouldn't have me doing a work around for the hinges.
The rubber seal on the freezer door rests on the top of my collar.

I glued and sealed it to the top of the freezer lip backed it with flashing aluminium tape and then insulated with the silver foil bubble wrap. Its in my unheated garage and I put a little tube heater to maintain the temperature at 10.5 °C. At present uses no more that 2kw per week to maintain that.

I had to router out notches at the back to allow for the fitting of the door onto the collar.

That's great. The heater is a great idea.
Yeah, your seal is thicker (bigger freezer) so I think I'll stick with the 27mm collar, seal and make up most of the wall difference with insulation.

If you intend to have yours indoors you may not need the heater. The heater is only plugged into the inkbird for winter months and then the rest is the freezer plugged into the inkbird.
 
Mine will stay in the dining room so no need for it. Just thought it was a good idea for anyone using a shed, etc.
Really wanted to make a start at it this weekend but the wife decided I'm busy!
