I stew then bottle our home grown fruit and as I appear to have a surplus, and it wont be long before the fresh stuff comes along, I decided to have a go at some mixed fruit.
2 x plum and 1 x apple, (total of 5lbs fruit and natural juice)
1 mashed banana,
a can of winemakers red grape (as I had it in the cupboard - slightly out of date but tasted OK) and
a kilo of sugar dissolved in a pint of water, then cooled.
General purpose yeast, nutrient and pectolase added at start
I don't really know if it will work but the must tasted nice.
Fermented it on the pulp for three days then yesterday strained it and transferred it to a demijohn. Topped it up to the shoulder with cooled boiled water and left it.
It went mental, frothing right up and out of the lock. Took three changes of airlock before it calmed down, and I could finally get to bed!
Bubbling away very quickly now.
I have an on/off relationship with wine making and have not made it before with my own bottled fruit (usually use the old surplus for mixed fruit jam)
Fingers crossed it works.
If any, more experienced wine maker can see a flaw please tell me so I can attempt to recifty it.
