I tried one of the pilsners last night amd I'm not a fan, so don't think I'll be stocking up on them. After brewing ipa's, pale ales and saison, lager just doesn't taste the same anymore. Maybe on a blisteringly hot day, I can imagine this would hit the spot. Are there any lagers that have the complexity of flavour you get from an ale or have all those hops irreversibly altered my taste buds?

What is or is not a 'lager' versus an 'ale' is a bit of a moot point TBH; but if you look at the maltier end of things with an Amber Lager though to Bock and Dark Lager then you can get some of the most amazing complexity and depth of flavours.
Everyone has their preferences of course :-)

It's all just fizzy water now unless its packed with hops

Have you ever tried "Jever Pils"? It's the most bitter German Pils I have ever come across (and I've drunk a lot of German beers over the years). It's not a malty beer, but it's packed with hop flavour and aroma 😋 However, do not expect it to be like a West Coast IPA.
It is available in the UK, but you might have to go to a more specialised off licence or bottle shop. I've never seen it in any of the major UK supermarkets - even the German ones.
 
I have just started brewing and saw some of those metal flip type bottles for sale online at the range..
They look good and reasonably priced.
 
Been going to Germany for years they have some great beers lagers wheat white and dark and reasonably priced in bars not so much in the large hotels but the smaller ones are good. Also schnapps are nice.
