Hi all. My first ever WOW (spiced apple) has gone great so far. Had a quick taste yesterday when I racked off to DJ and was pleasantly surprised. Quite a pleasant rosè as it is.

I Added campden tablet, de-gassed and added spice blend as per the recipe. (cinnamon stick, cloves, fresh ginger and orange zest, simmered and filtered). Then added finings and left.

This morning it has already started to clear and is beginning to look very nice. There is however, a large amount of sediment in the bottom of the DJ. I am planning to leave it in the DJ to bulk mature until at least late November so will it be ok sitting on all that sediment for a few months or should I rack again once fully clear?

Thanks in advance for your help.
