I've made an ag Exmoor gold today and have re-hydrated my yeast. Problem is the temp of the wort in the FV is still at 28 degrees, so to high to pitch and its not coming down very quickly!

I need sleep! So can I keep the rehydrated yeast covered up in my kitchen overnight to pitch in the morning?

You should be fine. You could put the FV outside for an hour that will cool it enough. But that will mean staying up another hour.

OK not a yeast I have used, my gut feeling would be put it in a fridge as most yeast will go dormant when chilled then allow it to return to room temperature before pitching.

You should be fine pitching it now. Just make sure that you don't let it ferment 1-3 weeks at 28.

Thanks guys, I've just stuck it outside. I'll give it half an hour, if not I take it, it maybe ok to leave as it is, but would be best to put it in the fridge?

This Brazil v Spain game is helping keep me awake, bloody early start tomorrow!
