Wurzel still fermenting?

Hi

Started a 15 ltr Wurzel 7 weeks ago but not to sure if it's finished fermenting, although I'm only getting a bubble through the airlock about every 25 mins there's still small bubbles rising from the bottom and forming a small foam head.

Although I'm in no hurry to rack and stabilise and as Moley said it's best to give the yeast time to get rid of the aldehydes
what concerns me is there's about an inch of sediment at the bottom and I'm not sure whether it's ok to leave this for any length of time.

Any comments would be appreciated.

That's finished, get it racked, asap. :thumb:

Just another thought, when you ferment in a 15 litre pet do you rack into another of the same or 3 x 5 litre pets.
 
If you're using the same sort of 15L bottles as me, there may be an inch of sediment at the sides but there's bugger all in the middle, so I rack to another of the same and top up with grape juice to bring mine back to around 0.995/6
