Hi all
Had Wyeast 1028 - 3rd generation - in the 'fridge in sterile conditions for 5 weeks. Making it up into a starter now and smells fine. What do you think - 5 weeks too long, should I use it?

Taste the beer when you have made the starter. If there are any off flavours then :nono: :nono: . If not it should be ok. I had a yeast cake in the fridge for 6 weeks it was OK the other week now it has its only white hair :lol: :lol:
 
You shouldn't have a problem Tony, and as Alistair says you will smell any problem.

I keep my split yeasts in the fridge in 500ml plastic bottles which are topped up with 100-200ml cooled boiled water; I've had no problems with making up starters after 4 months and understand they will be good for at least a year. :D
 
Thanks lads! I always smell and taste before I use them but good to know that you have experience of using them after so long!
