Hi all,

I have heard that hops with low Cohumulone are better for bittering but can someone explain why for me?

Also what do beta acids provide?

Rob, I really can't be arsed going through my books, but I think lower cohum hops impart a less harsh bitterness. Or the other way around. I'm six pints to the wind right now. Think of the bitterness of Target compared to Brewers Gold for instance.
 
jamesb is spot on - hops with high cohumulone levels give a harsher bitterness so those with lower levels tend to be preferred in taste testing.
