I did a rum and raisin stout as the family give away beer last year. It was brilliant. Its been requested for this year. I used a kg of raisins soaked in 1.5l of rum. It went into 20l. I macerated them and added to a hop sock then soaked in the stout. The key to stout is to bottle ferment. Notforce carb it. Let it do its thing naturally.
