Double the fire power now in the clapped out brew fridge! 🍺
 
So gently crashed the NEIPA down to 15 degrees ready for the dry hop...

Connected my gas tank up to the ball valve of my Brew Bucket and forced CO2 gently up through the beer for a good 30 seconds. Then opened the lid and very gently added the dry hops before closing the lid and repeating the purging process.

I decided to up the dry hop addition slightly as I ended up with more beer than planned in the FV. Plus I love Mosaic so I didn't need much of an excuse!

The dry hop addition was 200g Mosaic, 100g Cascade and 100g Citra (about 16g/L) which was pretty much two 500ml cans of hops :beer1:
 
Well... home brew conundrum... not sure what I’d like to brew next! The hop freezer is pretty full, I have speciality grains, lager and MO malt and a fridge full of different yeast strains.

I’ve decided to revive my St Austell strain that I propagated back in July from Proper Job bottles. It’s been sat in the fridge and was a proportion of the first starter that I made with the PJ bottles.

I didn’t look but I think if I used a yeast viability calculator it would be rather dead but knowing how well it’s been stored I thought I’d give it a go on the stir plate!

12 hours in and it’s off like a rocket! I ran out of spray malt so used the emergency pop bottle of wort that was buried in the freezer 😂 I think this was the left over wort from the Irish stout that I made ages ago 🍺
 
I’ve just brewed a strong “Vintage Ale” that I hope will be a little like the Fullers Vintage Ale. How about something like that?

Mmmm that sounds nice! Did you use the Fullers strain? I think something more sessionable might be in order though...

@Clint kindly sent me his clone recipe for St Austell’s Tribute and as I’ve got their yeast on the stir plate I think I might use that for inspiration
