Greetings ..... the missus has had a tidy up and this included the area i keep my wines in.... she inadvertantly took the tub, in which i keep the packets of stuff like stabliser and finings and has either misplaced it r thrown it away, much to my annoyance :(

i was unsure of the fresh ginger amount tbh. i had a look round recipes and worked it out what i thought i would need and hoped i hadnt chanced it too much.
I am only doing 5 litre batches until i achieve one i like then i aim to increase the amount to 25 litres at a time.

After looking at the many different recipes for ginger beer here i tried my hand at my version of a fiery ginger beer.
I used: -
375g fresh ginger - peeled and grated
3 teaspoons of ground ginger
500g white sugar
2 lemons - zest and juice
2 limes - zest and juice
1 orange - zest and juice
500...
pretty much thinking 2 cloves and 2 cinnamon sticks ... ty for the advice ... i know cloves have a strong aroma but was not sure if they would part with the same amount of taste to the wine

I would like to make some ginger beer for the kids to enjoy as well as an alcoholic varient for me and the missus.
I saw link somewhere for firery ginger beer that used chilli peppers which i would like to try.
It seems silly but all the recipes i see use yeast etc so how can i tell...
Muslin bgs (excuse the spelling)i have some of them but no drawstring so i guess i just tie the top?
Now to decide the spices .... i reckon cloves and cinnamon sticks should work but would one over power the other? im thinking that cloves have a strong flavour?!
Maybe if i was to eave the wine...

Just a quick question. I was thinking of a spiced apple wine and then i thought how do i do it in the best possible way.
For example if i was to add cinamon into it. Would it be better to use a cinnamon stick or to use the stuff you find in a jar near the herbs?
