    Brew Dog Tactical Nuclear Penguin - how's this possible?

    It's an ice beer. They took a 10% RIS and then kept freezing it until enough water was removed as ice to boost the ABV to 32% (the water freezes leaving the alcohol behind). My understanding is that this is legally viewed as similar to distillation so illegal at home.

    I seem to recall that the Morrisons own brand bottled water has quite high sodium as well as bicarbonate (which is odd as the chloride was fairly low). Maybe I'm getting my waters mixed up. I just get Tesco's Ashbeck (very soft) anyway as I can get well 'ard water from just turning on a tap!

    I use both liquid and dried. If you can get the flavour and characteristics you want in a dried yeast then use it - it's a lot less faff and much easier to get the amount of yeast you need.
