I have never fermented anything over 5 gallons which has only ever needed to be heated. I was thinking of buying a 10 or 20 gallon plastic tub and fermenting in that, but I have read that this would need to be chilled.

How big can you go, before cooling is required?

There are to many variables to even guess and ideally you want cooling with any volume though you don't need heating anymore when you get to around 200l as long as its insulated and external temps are within maybe 10c ish of target. For a more practical answer this time of year in an unheated shed your only going to need heating while in a room thats always 18c plus your only going to need cooling but somewhere thats inbetween or fluctuates between the 2 you want both. Also the larger the volume and the better the insulation on the FV the leed heating and more cooling you need.
 
Cheers, I guessed almost as I hit post, that my question was to simplistic.
Currently I tend to brew indoors but have been known, in winter, to put a couple of 5 gallon fermenters with a heating belt round one and a fish tank heater suspended in the other, all wrapped up in an auld quilt in my unheated garage.
Been thinking of building a more permanent brew box/cupboard in the garage and wondered what sort of size I could get away with.

Excellent link Chippy_Tea ta. I am really liking the idea of using a water bath to keep things warm. I was considering a box with an old fridge and bar heater hooked up to an STC-1000 in the garage so it could be consistent all year round.
