    1020 is a bit high. What kit was it? I generally leave my beers alone for 10-12 days and then check the SG.

    I always take my OG before the yeast is added as I like to drink the sample and it's much better without a bunch of yeast in it. Plus, it means ALL the yeast goes into the brew and none into the sample which I don't add back.

    From what I've heard (could be wrong :shock:), when you freeze yeast you risk rupturing the cell walls due to expansion. This could be completely wrong, but seems plausible bc if you freeze a beer bottle, the expansion causes the bottle to burst.
