For a seven litre brew he uses

1kg dried pale malt extract
300g root ginger
410g honey
ale yeast
Water!

I've made just over 20litres:

1.5kg Coopers pale
1 kg honey
1.2 kg root ginger
500grms Brewing Sugar
ale yeast + few raisins
Juice + 1 lemon diced
2 litres of apple juice
2 litres of lemon cordial dilute
Rest topped up with Water!

Ginger Diced and bashed with rolling pin
Boiled it up with bottled water, added honey, malt extract and lemon!
Let it cool down slightly, added to carboy
topped up with water, juice and cordial and shaked!
Fired in a few rasins and dry pitched the yeast

Bubbling away nicely!!
 
Ive done the same thing!!!!!

Differences ive made are

Using 1kg of honey instead of 500g
used champagne yeast instead of ale yeast


Also if memory serves the guy made 7 litres not 10
I added extra ingredient to make 10 litres

After tasting primary id should of added lemon I think

had some left over lemon cordial from the lemon wine I started last week! Pics tomoro!
