I've fermented some Tesco apple and mango juice with cider yeast I harvested from a batch of cider I made from real apples and it has this yeast cake floating on top. I thought it was krausen (or whatever the cider equivalent is) but it's been there for about 2 weeks now, it's not getting smaller and the apple juice I fermented at the same time in another demi has finished fermenting.
Has anyone else found this with Tesco apple and mango? Anyone know what's going on here?
