Would it be better with Top or Bottom fermenting yeast ?

I think they stay suspended with no buoyancy to make them rise to the surface - I'm sure I've seen footage in microgravity in which gently spinning a floating blob of fizzy drink ( by blowing on it ) made all the bubbles migrate to the centre -which means after drinking they'd all come out the other end some hours later.

If it's all the same to you I'll stick to Martinis in the absence of gravity.

That sounds right. Centrifugal force would push the denser liquid outward and the less-dense gas inward. You get the same thing when you stir your tea or coffee - the middle sinks down because the liquid is forced out to the sides of the mug.

Lovely experiment and :hat: to the lad. The world needs more of them.
 
*cough* kinda defeats the purpose of the experiment a little... ;)
