What might cause bitterness in a fruit wine?
I am slowly - with much help and advice from this wonderful forum- getting to grips with various brews and concoctions. However it is not unusal for my brews to have a slight but noticeable bitterness on the tongue...kind of almost aftertaste.
What might be causing this?
One example is I have a fresh fruit mango wine on the go...just a simple recipe...and as I stir daily, and lick the spoon (afterwards!) there is a slight bitterness.
Maybe as it is still fermenting that it is bitter....
