Was in the kitchen this morning just about to make the customary home-made shortbread when I thought I'd experiment...
I amended a Be-Ro cookbook recipe for Highlanders and replaced the caster sugar with medium spraymalt and, instead of rolling the mix in demerera sugar befire slicing it, I rolled it in crushed dark crystal malt.
The result can be seen below...and they taste yummy! They have a bit more 'crunch' to them than the Highlanders have and I think, next time, I may use dark spray malt instead as these are just not malty enough for me. Mother and 'The Wife' are liking them, though, so it looks like I may be making some more tonight.
