Ive got 4 kg of sugar in 5 gallons of water with 5 pts of elderflowers in it.

I forgot to take the sg so cant work out the overall alc content.

Any ideas

A nice sweet lightly sparking refresher for summer.

Is it a campden tab and tsp of pot sorb per gallon to stop the fermentation?
 
But don't do that if you want sparkling wine. It should stop naturally around .990-.995 and be a dry/medium wine. You could stop it now and be sweet, but you would need to carbonate to make it sparkling. Once you add pot sorb and sod met you will kill the yeast, so it won't carbonate in the bottle. Check out champagne method if you want it sparkling.
 
Yes i know that, but want a sweeter wine so must stop the yeast. Its already slightly fizzy as its not been degassed. Id really like to put it through a corny and then bottle, but since i dont have one itll have to be a 60s style soda stream. Its extremely crude method of gassing it up but i dont want sediment inthe wine and the gasing process is wasteful. The final brew is worth the effort though.

If anyone has a corny for sale in the west susxex area let me know.
