Greetings. Can somebody please offer me a few words of wisdom regarding caramelising. If I were to take a couple of liters of the first running's how much should I reduce it by and at what point do I add it back to the boil?
 
Never tried it myself but seen a TT landlord recipe on Jim's forum which says to take 2L of first runnings and boil down to half original volume ie 1L.
 
When I've done it I've just kept going until it's become thick and sticky, a bit like real caramel.
 
Well I boiled 2 liters down to about 200ml but it still was not really thick and sticky. I added it back to the boil about half way through, should I have waited to the end to add it back?
