Here is the recipe for my dessert wine. (5 Gal) I have made this twice now and it is so full-bodied and fantastic as soon as it is ready! Hope I don't get bashed for this recipe because it truly is amazing. I did use the chemicals that came with it but I didn't use the yeast - I bought my own. Photo will follow. Here is what I put in it:-
5 gal wine kit (I used a Chardonnay / Semillon one)
5 to 6 bananas boiled up and simmered in a pan for about 10-15 mins (only used the liquid - threw the flesh away)
2/3 of a bottle of orange blossom water (I know!)
1 and a half bottles of vanilla extract (not the crappy stuff)
2 x 1.5L bottles of Copella Apple and Elderflower juice
I did put in some dextrose but can't remember how much. 2kg I think?
Topped up to 5 gal with water.
Edit to add - I also added half a jar of clear honey.
It started it at 1.120 and I stopped it at 1.030. I must admit even for me it is a little sweet, but will last me forever as you don't need much. That is, if I can keep the husband off it!
I used Gervin Sauternes yeast. The esters are amazing!
I didn't use pectolase. Didn't need it in the end.
Took 9 days from start to finish.
