i have a few gallons [9] of plum wine steadily fermenting.. :party:
im quite surprised that they are happily fermenting at around 18-20 degrees allowing for the room temp fluctuation.....

i thought that wines needed to be kept at around 25 degrees..... :wha:
 
I believe that between 18 - 27C is fine. I have 2X 5 gallons of easy white wine & 2X 1 gallon demi's of WOW bubbling away merrily at 18C (possibly even lower at night) in the cellar :thumb:
