Just a quick hi to everyone. Been out of homebrew for a while, but recently got the bug again and filled 3x5 gallon containers and 3x demijohns in a night. Don't think I'd manage to empty them in a night, well not unless they go down the sink! I have fermenting a John Bull IPA, a Youngs Scottish heavy and a more expensive Woodforde's Wherry, all new to me.
The demijohns are full of various apple juice and mixes.

I really like the idea of venturing into the next step of beer brewing, also attempting something different like sake or potato wine.

Hello and welcome. Sake would be an ambition of mine too, but for the moment it seems very out of reach. From what I can gather Japanese rice wine is kick started with a specific enzyme that's not so readily available off the shelf. I also managed to try some potato sake in Tokyo, but that would be illegal to make at home in this country. :drunk:
