I went with the 310 as i wanted to be able to set a fermentation temperature profile and not have to worry about going in and changing the temperature manually.

The only advantage i can think of for a longer temperature probe is for putting directly in the fermenter or in a thermowell. The model i have the probe is about 2" long, but i have it hanging in the air within the fridge rather than in the liquid.

Having just noticed the pictures, it looks like the 308 models have removable sensors, i'm not sure what benefit this would have, other than an easy replacement if the probe becomes faulty.

I got the 310T and I'm currently testing it out with my water bath, aquarium heater & fan combo and it's working great.

Just need to get myself a fridge for the next brew!
