Thanks for all the advice and suggestions everyone. I started looking at the various recommendations but got side tracked by YouTube videos of people using whetstones and honing steels. There's as many opinions on how to use them as there is on what knives to buy!
 
I'd love an excuse to by more shinier knives but I do amost everything with these and am really happy. I've got a low end procook bread knife and carving knife which are fine and I use so little I can't justify upgrading

The Vorda bread knife is an absolute joy to use. I look forward to having some really soft bread/rolls so it can be cut in a straight line! If the rest of the range is this good then I might get the filleting knife on my next (decadely) visit.
