Maturing wine

Hi all, quick question, after wine is all clear I put straight into clean bottles and left to mature (well as long as I can resist) but if I were to mature into demijons would I still need to add 1 campden tablet as nothing gets added to bottles? ....cheers jim
 
Its a matter of choice. I always use campden when maturing, its not worth the risk of loosing the wine after so much work and patience! There is no after taste that I have ever noticed, especially if its maturing for a while :hat:
 
I always stabilise my wines before bottling (after an unfortunate accident with 6 bottles of coffee wine). For bulk aging, just follow the same principle as bottling. I only ever use campden tablets for sterilising things I can't rinse/fruit.
