So, I've got 2 x 1 gallon DJs of Mead started. Considering favouring 1 for comparison.

I've read different opinions as when to add the spices, what do you guys do ?

Thinking liquorice and/or Star Anise maybe.

Thoughts ?
 
Heres what I use
Orange and lemon zest
Cinnamon
Star Anise
Nutmeg
Cloves
All-spice
Corriander seed.
Ginger
Rosemary
Rose-hips.
Raisins.

Be carefull of cloves they are very strong,I add the spices once the ferment has died down
I use several hundred grams of raisins in a 1-2 demijohn batch so I suppose my "mead" is technically "Pyment"

The Honey I use is nothing special either.
 
Did someone say comparison? I love a comparison!
Be bold with mead. Once you have a good reliable base mead then absolutely experiment.
Citrus, ginger or chilli/peppers (capsicumel) are favourites of mine.
I tend to do 3 or 4 small batch, 2.5 ltr brews with varying amounts of an individual ingredient then see which one comes out best.
