So, finally I've got round to another batch of mead. Here's my brew:

1.120

Recipe & Notes:
2.04kg Eucalyptus Honey
Voss Kveik yeast 2tsp
1/2 tsp tannin
Water to 5L

So far so good, started bubbling about 4 hrs after pitching so I'm a happy camper at the moment. ABV calc says it should get to around 16%, so plenty of aging to come afterwards! I plan on adding Vanilla pods to secondary for a week or so and then stabilizing, fining, and bulk aging before bottling.
Oh and I intend to add fermaid-k using TOSNA schedule.
 
Update: damn this Kveik yeast is er.. energetic! I had to improvise a blow off tube / bubbler this morning as it bordering on volcanic!
But it's going well. Im using DAP for my nutrition as my fermaid-k hasn't arrived yet 🤦‍♂️
