Odd Oak type flovour in my WOW

Hi guys, ok, so i have made a couple WOW brews. 1st one seems fine so thats good. The other however smells / tastes like an oakey chardonnay, which is my most hated wine :(
(The 2 WOW's were different juices)

I used:
1L Rosé Grape Juice
500ml OJ
500ml AJ
1/2 tsp tanin
1 tsp each of pectolase, yeast, nutrient, glycerine
900g sugar

Filled up to 4.25l with water and topped up after 5 days.

OG - 1.100 @ 4.25l
FG - 990 @ 5l

i was just wondering if there would be a reason for this taste? I have stabilised and added finings and will see if it gets better, but i am not hopeful.
 
God if I could brew a wow like a chardonnay I wouldn't have spent £100 on wine 2 kits today.

You haven't managed to crack the Holy Grail that is a decent red fruit juice wine preferably a cab sauv, even better a chilean one :rofl: :rofl:
 
But I hate the oak type flavour.

So you can't see that I have done anything wrong then?

If it doesn't improve, I will have to bin it, or use it in a summer BBQ punch!!
