HI Guys

I am trying to knock up an American Pumpkin / Autumn Ale and wanted some advice.

Grain

81% - Pale Malt
9.5% - Crystal Malt
9.4% - Dark Brown Sugar
2 x Cans of 100% pumpkin filling

Hops
60 mins - Cascade
5 mins - Cascade

Spices

Cinnamon
All Spice
Nutmeg
Ginger Root

Just wondering if anyone can suggest any changes / additions...

I was wondering if it was worth adding a bit of biscuit & munch malt maybe.

I want a nice malty spicy american fall / pumpkin ale in the end.
 
Put the pumpkin (unspiced) in a pan at 350 in the over and caramelize it, add 3/4 to your mash and 1/4 in the boil. I would use another bittering hop like northern brewer vs cascade which is really a flavor/aroma hop.

Spices - put some vodka in a jar with spices and let them meld for a day or 2. At 10min toss the contents in.
1tsp Cinnamon
.5 tsp All Spice
.5 tsp Nutmeg
.5 tsp Ginger Root
Vanilla extract or a bean
