Hi all,

Not something I have a lot of experience with, but I sort of talked myself into brewing a Wit with Damfoose . . . . . . So I guess its actually two half wits :lol:

I'm thinking something along the lines of a 1.050 Wort, hopped with noble hops to 20-25 IBU

Belgian Extra Pale Malt 55%
Pale Wheat Malt 65 %

Stepped temp mash at 20 minutes at 35C - glucan rest
then 70 minutes at 65C

A mixture of noble continental hops of various ages to 25IBU boiled for 90 minutes

Coriander and Curacao Orange peel added for the last 15 minutes of the boil

I'm thinking of using the Brewferm Blanche yeast on my Half wit.

Any alternatives / Considerations ? . . . I'm going to investigate Mr Wheelers options in Brew Classic European Beers as well.

Edit - Mr Wheeler lists the ingredients for 25L Hoegaarden ( 1.048 , 18 EBU ) as

2.8Kg Pale Malt
2.52Kg Raw Wheat ( I knew I was cheating with the Wheat Malt :lol: )
280g Flaked oats ( :shock: :hmm: )

26g Goldings ( 90 Minutes )
17g Saaz ( 90 Minutes )

15g Saaz (Last 15 Minutes)
3g Coriander Seed
3g Dried Curacao Peel
 
Jamil's recipe is

OG 1.050, FG 1.011, IBU 20, 5 US gallons finished beer.

2.49kg pils
2.26kg flaked wheat
113g munich
510g flaked oats
+227g rice hulls as a lautering aid

mash at 50C/15minutes then 68C until converted.

one addition hallertau (4%, 90mins) 34g for 19.7 ibu

spices:
fresh citrus zest 43g
crushed coriander seed 11g
dry chamomile flowers 1g
all added five minutes before the end

ferment with wlp-400/wy-3944 or brewferm blanche at 20C raising to 22C for the last third

I'm still confused by the inclusion of oats in a wit . . . from what I remember it is just pale and wheat :hmm: :hmm:
 
In Hoegaarden I believe you're right - pils and wheat. I don't see oats as being 'out of style' though and Belgian brewers are fairly keen on chucking different cereals into their beers. Oats will make it smoother/creamier I guess.

BTW, they don't use wheat malt - it's unmalted. You can try grinding wheat bullets if you fancy but wheat flakes will be a lot easier.
 
Oat can a nice texture to the beer which can complex the un-malted wheat

Brewferm Blanche is a nice choice, but I would up the coriander seed

This is one i did for my daughters christening and it went down a storm with my friends (it quite similar to jamils)

Flaked wheat is really the key, gives the right colour and texture and it's easy to mash ;)

Don't be afraid of orange peel but DO be afraid of coriander, don't overdo the latter :shock:
