Good Morning!

I just wanted to get your general opinion on sanitary fittings/valves (Price difference ca. 120%).

Are these worth using for a small homebrewing machine?

Sanitary fittings are polished similar to the tanks in which beer is brewed, so i am wondering why should i also not have the valves, fittings polished?

It depends on what stage of production you're on. Anything in the fermentation area should be smooth, safe, and easily removed to be cleaned and sterilized. Anything before that is going to be under high heat for a length of time, killing 99.999% of anything living in it.
On the fermenters, I order boxes of valves, plastic, and only use them 2 times before throwing them away. I get them from China and they're only like 50 cents when ordered in bulk. Well worth the price for keeping out the nasties.
 
Thanks for the input. I think I will try the stainless steel sanitary valves.
