Hi all, so with your help and advice I have been merrily working my way through some TCs.
I did three types -
Straight TC
Straight TC with sweetener
Straight TC made with raspberry Lowizc
All coming out at about 5.3% and all perfectly palatable - but best served chilled.
I do feel that they are missing something, and I am not sure what...I would describe it as "mouth feel" or perhaps "body"?
They seem very light or thin...watery? I am not sure what I am trying to describe...but it is more of a feel than a taste that is lacking...
Is this where I should use more tea/tannin?
What is it that tannin 'gives' or does?
I hope, off the back of a previous thread just posted, get some more on the go for Cider-istmas
