Hi all,

the wife is away tomorrow so I'm planning my leftovers US IPA brew :)

I need to pick up some caramalt if I can get to the shop as I think it'll help the recipe and the rest are leftovers.

Let me know your opinions?

Grain Bill:

6kg Maris Otter Malt
270g Pilsner Malt
270g Caramalt (for head retention) or should I look at Wheat Malt? I may be limited on what I can get!

I'm looking for a dryish beer so mash at 65.5 for 90 mins then batch sparge

Hop Bill for a 60 min boil

32g Chinook Pellet - 60 min
11g Ahtanum Pellet - 60 min
11g Citra Pellet - 10 min
5g Chinook Pellet - 10 min
16g Cascade Pellet - 5 min

Ferment with WLP001 Liquid Yeast

Dry hop for 5 days with:

16g Ahtanum, 16g Cascade, 16g Citra

Hoping to achieve:

OG: 1.053
FG: 1.010
IBU: 53.8
Colour: 11 EBC
ABV: 5.6%
 
Looks like a very nice grain bill.
Personally I'd go with wheat malt if you have it. Although, a lot of hops can help with head retention.

I'd be tempted to up the late hop additions, particularly in the last ten minutes, also what about a whirlpool addition?
 
I did think about that. I like hoppy beer too.

I may add another 15g of each in whirlpool. May not need to up the late additions then? or shall I bung some more on the 10 and 5 additions?
 
Yea, bung a few more g's in between 10 and 0 if I were you.
I'm not a hop head but my theory is add a few more hops because the flavours fade relatively quickly and sometimes a beer can take a while to condition properly, if it takes ages for the malt to mellow you may have lost a lot of hop flavours. My two pence worth any way!
 
Oh, and experiment with additions at different times to change what flavours you can get from hops.
For instance I've just made a second attempt at a Sierra Nevada pale ale clone (it's not bang on yet, still needs a few tweaks) but I noticed that holding a whirlpool addition at 80*c for 30mins has brought out LOADS of lychee from the cascade hops that the first effort didn't have!
 
ok.. Here's the latest version (again 25L batch as I reckon my bin can handle it!) I'm pretty sure the shop carries both crystal and wheat so I'm going to use them both in small quantities (3% - 4%)

200g Light Crystal Malt

IBU: 60.1 (beersmith reckons an increase in IBU on the Whirlpool)
Colour: 14.2 EBC (bit more colour than previous)
ABV: 5.6%
