I have;
7lbs of LME (the suma stuff)
500g Extra dark spray malt
50g nugget, 50g Saaz, 50g chinook and 50g cascade hop pellets.
I was thinking.
1) Boil some of the malt with the hops for 60min. (in 10-15l of water if I can get a big enough pot)
Start 10g of each, middle 10g of each, end 10g of each.
2)top up to 20L mix in the spray malt
3)Ferment and then dry hop all the rest (20g of each) for 4/5 days at the end of the fermentation.
I don't want to add extra sugar as I would like a sub 5%. (all the beers and ciders I have been making are 6.5-7.2 and I cannot enjoy more than 3 at a time).
What do you think? Have I got the right idea. I have no Irish moss so I was going to put it through a sieve into the fermenter.
