I've got a wine kit on the go and it seems to be bubbling more when its nightime or dark, am I imagining it or does it ferment better in a darker environment ?

As the ambient temperature rises during the daytime, the wine is probably responding to the rise in temperature; which will get to the wine in the early evening and carry on into the night.

When fermented in a clear glass DJ, wines definitely keep their colour better if they are kept in a dark environment. :thumb:
