Hi All,

After getting a Wilkinsons home brew kit for Xmas I eventually got to work on Saturday on making a Tom Caxton real ale brew.

I wish I had discovered this website before hand as I am having difficulty maintaining 21'C in my spare bedroom.

Any hints and tips greatly appreciated.

Wrap your FV or DJ in blankets/duvet, or you could use heated water bath or heat belt, it will still ferment at lower temps but it will take longer, the basic rule of thumb is 2 weeks fermenting, 2 weeks carbonating at same temp as fermentation and 2 weeks somewhere colder to condition.
 
Welcome to the forum Lee. I'm from Newcastle myself, although I moved to Lancashire a couple of years ago.

You'll find plenty of help and advice on here. I wouldn't worry about maintaining a temperature too much. As long as it doesn't get too hot or cold, you'll be fine. You can wrap it up in a blanket and put an old belt round it to keep it warm.
 
18c or above should be fine with the beer being in the FV for two weeks it'll give the yeast plenty of time to do it's thing. Your temp dropping low is the better alternative than it going too high where the yeast will produce off flavours in your beer. If your FV temp drops too low then the yeast will just go dormant until the temps come back up again. Check out the temperature control threads on here and you can see what one works best for you, in the meantime you could try wrapping your FV to insulate it from external temperature changes to minimise the impact they have.

The instructions say 4-6 days in FV then transfer to barrel for 2 weeks then its ready.

Oh there's so much more I need to learn. :doh:

Instruction number one in the kit brew should be.

1. Throw this booklet in the bin
2. Seek advice from HBF :-)

Plenty of info here. Soon you will be taking ph readings, playing with water chemistry and AG of course ;-)

Here is my fv. Do I seal the lid down or just have it loosely on?

If no air lock. Just leave it loose for now. Some people spray sterilization fluid on cling film, then place that over the top, then place the lid on loose.


The CO2 being produced will create a gas blanket so to speak over the FV tland will serve to stop bacteria rtf getting in.

Try not to lift the lid to much. Just leave it be :-)

If your affraid the temp is to cold. Which it probly is in Newcastle ;-) wrap a blanket round it. And check it Sunday ;-)
 
What is the ambient temp?

Can't quite read the thermometer in the pic. If it's 18 all day and night you should be fine.

Not as glamorous as the French connection lol

Demig I'm sorry, I was going to PM you when I was kidnapped and taken to Prudhoe for my 30th.

But we had wedding plans to sort out (unbeknownst to me) ;-)
 
Ambient temp ranges from around 13 at night to up to about 25 through the day

Prudhoe! I worked and lived in Prudhoe. I've still got mates there. I hope you stayed out of the Jerry?
