Good video. I've used k-97 twice and both times it's stalled on me which has led to further problems. As I left the beer for a while with no movement in SG, I bottled, but that must have roused the yeast and I got a load of bottle bombs and gushers.

I made friends with a brewery owner when I lived in Ireland, his brewery's flagship beer was kolsch. He was using a liquid yeast (didn't say which one) but said they decided to move to US05 as it was much easier to deal with, no noticeable change in the beer.
I guess it depends on the recipe really. Ive had more pleasing results with K97 but sometimes you have to work it a little. US05 I would see as a compromise.
