Hello all...
Why is it,stouts of any kind...in my experience..have huge,violent fermentation? My recent one,the GH American,has burst the lid off several times and is still chugging away a week later. The dry stout did the same,both with 05,but the grain bills are quite different..
 
Good question! Now you mention it, the American stout I've got going at the moment is rather lively too, as was the oatmeal stout beside it at first - but i had put it down to WY1318 which goes bananas even in the starter jar!
 
Dark grains are very foam positive, even more so than stuff like wheat. I think the krausen just keeps building up because the wort holds on to the CO2 bubbles.
