    Yup - that's me. Good find. Malt Miller is great for this - as you can design and order the exact ingredient amounts you need. If you decide to go ahead with it, let me know what happens I'll be interested to know what you think.

    +1 for the Gelatin I buy a pack of Gelatin sheets from the baking bit in the supermarket. One sheet does me for a 5 gallon brew.

    cheers everyone, i think this post does exactly what I thought it would..... everyone agrees that brewing all grain from fresh ingredients produces way better beer than from a kit. who'd a thunk it!........ pretty obvious really :doh:

    This is the exact method I use - I use word or Powerpoint to design the label. Print it, cut it and stick it on with milk.

    60 min vs 90 min boils

    In theory boiling for a good 60 mins is supposed to remove dimethyl sulfide which can add an off corn type flavour to the beer. Also as you have already pointed out - you need less hops to achieve higher IBU's as your boiling for longer - however if you do boil longer then you'll loose more...

    I use Gelatine sheets - from the baking aisle in the supermarket. doctor oetker i think the brand is, but i guess it won't make too much difference. I use a single sheet for a 5 gallon batch. - a "splash" of water in a saucepan, and then drop the sheet in. - let it soak for a couple of mins...

    After its finished fermenting - dissolve gelatin in warm water and add it to the FV and cold crash it. I'm pretty sure this will cause all sorts of stuff to drop out of the beer and clear it up.

    I used to live in a pub and look after all the cask ale we had - the best seller by far was Boddingtons (this is going back 25 years). I would have 6 x 36 gallon casks of the stuff on stillage at different stages of being rested, tapped and vented before I would serve it - They were my babies...
