I have been making Youngs dinfinate wine kits, i just have a quick question about them, it does not say anywhere in the instructions about racking off before adding fining's, However i would have thought the best way to do it would be to rack into a clean demijohn when it has stopped fermenting, then add the fininings etc, would this be ok?

Yes, rack first.

After that I usually add one crushed Campden tablet, dissolved in around 50ml of boiled water (while it's still pretty hot).

If your wine's not absolutely dry, or you're likely to want to back-sweeten, add half a teaspoonful of potassium sorbate to prevent re-fermentation, popped corks or bottle bombs.

De-gas the wine (put your hand over the neck of the DJ, shake, release the fizz, repeat, repeat, repeat) then follow the instructions for your finings.
