Hi all
As some one who has only been brewing beer for some 10 months (Ie kits) I have just started to get into AG but I need some information , On picking a beer from Wheelers book I am confused on the term of post boil hops when to add and for how long any information would be a great help :

Post boil is once the boils over, some cool to 80'c then put the hops in with a steep of say 20 minutes before carrying on cooling. Or they can be put in when boiler is turned off and then the chiller turned straight on.
I've done it both ways and not experienced enough to notice any difference apart from maybe a bigger risk of infection with the steep method due to longer exposure at lower than boil temps.
