Planning on brewing a dubbel tomorrow, recipe is looking like

Pilsner
Munich
Belgian caramunich
Special B

Noble hops
Yeast wlp530

I was planning on making some candi sugar but could I achieve the same by using dark brown sugar
Either will be fine. I would make a dark version of Golden syrup by just cooking it a bit longer, because it is quite fun to make. As Nicks90 points out there will be some differences between the approaches, but perhaps not much.

I ended up making it today. I made my own Candi sugar

That's the colour I went for, I will go darker for my Quad. The dubbel today was 1.074, so at the top end of the scale
 
That is exactly what I meant!
Hope it all goes well - 1.074 is a mighty beer by my reckoning!
