Did this one today using a 5kg of year old Maris otter I bought just for the purpose of doing a recipe with the store cupboard speciality malts and freezer drawer hops, all about 18months old themselves. Decided to mash low at 63 degrees because I want this quite dry, it seemed to do the trick because I got a whopping 92% brewhouse with an OG of 1.072 and just over 25 litres in the fermenter. The wort tasted particularly sweet and I'm hoping it'll go quite low, no idea what the hop blend is going to come out like but the freezer has a bit more space and I've finally used the last of my leaf hops so that's a bonus.
