Boiling with lid ON

This has been very interesting to me seeing as I am going to be boiling a 50 litre pot on a gas stove, with the pot positioned as much as possible over 3 of the burners I can only just about get a little rolling boil. This turns into a much better boil when I leave the lid on :party:

As its a gas stove I can't insulate the pot so this is very helpful, also less steam so less initial volume of water and less gas woohoo!

Seeing as its possible to leave the lid on, this gave me an idea of another way of attaching a thermometer.
Do you think it's possible to drill a small hole in the lid and drop in one of those long length probe analogue thermometers (so the tip is in the water)?

why need a thermometer in a boiler.....its boiling or it aint ...
 
Can I suggest you don't do this with a Real Lager malt . . . . Unless you do like the flavour of cooked corn . . .it's fines for our normal Pale malts but not for US malts . . .or indeed specialised Weyermann malts ;).

As Someone said earlier it's never quite as simple as the book (example) suggests ;)
